Avocado Egg Toast

There's nothing more satisfying than avocado toast, and the addition of soft boiled eggs and freshly sliced tomato completely transforms this healthy modern classic into a breakfast you'll want to repeat every day of the week.

INGREDIENTS

  • 2 slices of sprouted ezekiel bread

  • 1 ripe avocado

  • 1 beef steak tomato

  • 2 organic farm fresh eggs

  • 1/2 cup of fresh arugula

  • 1 tbsp extra virgin olive oil

  • salt & pepper to taste

  • Trader Joes everything bagel seasoning

 
  1. INSTRUCTIONS

    1. In a small or medium sauce pan, bring water to a boil. (make sure it's enough water to completely cover the eggs once they are dropped in.) Prepare an ice bath for the eggs for when they come out. 

    2. Drop the eggs in the boiling water and cook for 6-7 minutes for perfectly runny eggs.

    3. Toast two slices of sprouted ezekial toast. Spread with mashed avocado, place a slice of fresh tomato on top and season with salt and pepper to taste. Drizzle the olive oil over the seasoned avocado and tomato and add arugula on top.

    4. Remove the eggs from the boiling water and immediately place in an ice bath. Gently tap the egg on a hard surface to crack the shell and peel the shell off completely. Slice the eggs in half and place on top of the toast. Sprinkle with everything bagel seasoning and more salt and pepper if desired.
