Chocolate Chip Banana Bread
This craveable, super moist, fluffy banana bread is filled with sweet little chocolate chip morsels, and gets an extra kick of flavor with the addition of greek yogurt.
INGREDIENTS
1/2 cup butter (equivalent to 1 stick of butter), melted
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 and 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup Greek yogurt
2 over-ripe bananas, mashed
1 cup semi-sweet chocolate chips
INSTRUCTIONS:
Preheat your oven to 350ºF (176ºC), and lightly grease a 9 x 5 (23cm x 13cm) bread pan.
In a large bowl, combine flour, baking soda, and salt. Stir until well combined and set aside.
Lightly beat the eggs in a medium sized mixing bowl. Add mashed bananas, Greek yogurt, butter, vanilla and sugar. Stir until well combined.
Pour the wet ingredients into the dry ingredients and stir gently. Do not overmix.
Fold in the chocolate chips.
Pour the batter into the loaf pan, spreading it out evenly, and bake for 35-40 minutes, or until a toothpick inserted into the middle comes out clean.
Remove from oven and let cool for about 10 minutes before transferring to a cooling rack to cool completely.
