Healthy Penne Alla Vodka

Creamy, dreamy velvety pasta sauce that mimics my favorite, Penne Alla Vodka over protein-packed Banza chick pea pasta noodles.

INGREDIENTS:

  • 1/2 large avocado, pitted (or one whole small avocado)

  • 3/4 cup crushed tomatoes or substitute already-made tomato sauce

  • 1/4 cup of olive oil

  • 1/4 nutritional yeast

  • 1.5 tsp Italian seasonings

  • 1 small clove of sauteed garlic

  • Fresh basil leaves to taste

  • Salt, pepper and a pinch of red pepper flakes

  • 1 cup cooked banza pasta (I used cavatappi)

  • Freshly grated parmesan cheese

 

INSTRUCTIONS:

  1. Blend all the sauce ingredients until smooth. Taste and add any extra seasoning you may want.

  2. Cook Banza pasta according to package.

  3. Toss the cooked pasta with the sauce until warmed through.

  4. Serve with freshly grated parmesan cheese and fresh chopped basil.
