Mediterranean Olive Oil Pasta

Satisfy your craving for pasta with this lighter, Mediterranean-inspired pasta dish. High-quality olive oil, fresh parsley, blistered tomatoes and a few other Mediterranean flavors bring this dish to life.

INGREDIENTS

  • 5 garlic gloves

  • 1 cup parsley, fresh

  • 4 chopped scallions

  • 1 small package fresh grape tomatoes

  • 1 lb spaghetti, thin (can be regular, whole wheat, brown rice or banza pasta)

  • 1 tsp black pepper

  • 1 tsp red pepper flakes

  • 1 tsp pink salt

  • 1 cup Artichoke hearts

  • 10 large, fresh basil leaves

  • 1/4 cup Feta cheese

  • 1/4 cup kalamata olives, pitted

  • Zest of 1 large lemon

 

INSTRUCTIONS

  1. Heat the Truva Organics extra virgin olive oil in a large cast iron skillet. Lower the heat and add your five cloves of chopped garlic and a pinch of pink salt. Cook until fragrant, stirring regularly. Next, stir in the parsley, halved grape tomatoes and chopped scallions (whites and greens). Cook over low heat until just warmed through, no longer than one minute.

  2. Cook thin spaghetti in salted water according to package for al dente pasta. (usually between 6-10 minutes depending on the pasta)

  3. When the pasta is ready, remove from heat, drain the salted water and add the pasta into the cast iron skillet with the warm olive oil, parsley sauce. Toss with tongs to coat the pasta thoroughly then add a pinch of salt and black pepper. Toss again to coat.

  4. Add the remaining ingredients and toss one more time. Serve warm, and if you want, top each bowl with more basil leaves and feta.
