Pork Stir Fry

Juicy pork pieces and crisp, tender vegetables in a tasty asian stir fry sauce with Trader Joes vegetable fried rice.

INGREDIENTS:

  • 1.5 lb pork tenderloin

  • 2 tablespoons vegetable oil (divided)

  • 2 cups chopped broccoli

  • 2 cups chopped bell peppers

  • 1 tablespoon grated ginger

  • 1 tablespoon minced garlic

  • 2 teaspoons siracha

  • 1/4 cup soy sauce

  • 1/4 cup vinegar

  • 1/4 cup honey

  • 1 tablespoon hoisin or trader joes korean BBQ sauce

  • sesame seeds and green onions for garnish

  • 1 bag of Trader Joes frozen vegetable fried rice, or 1 cup uncooked white or brown rice.

 

INSTRUCTIONS

  1. Heat a large skillet or wok over medium high heat. Add one tablespoon of vegetable oil to the skillet to heat.

  2. Slice the pork thin, season with salt and pepper and add to the skillet. Cook, stirring often, about 6 minutes or until cooked through. Remove to a plate and set aside.

  3. Prepare rice according to its package. (For this I simply used Trader Joes frozen vegetable fried rice but preparing your own rice is another great option)

  4. Add another tablespoon of oil to the skillet. Add in ginger, garlic and siracha. Stir well. Cook for one minute or until fragrant.

  5. Stir in the broccoli and peppers and let cook for 5 minutes or until tender-crisp, stirring often.

  6. Stir together soy sauce, vinegar, honey, and hoisin in a small bowl. Add to pan and stir to coat. Cook 5-6 minutes, stirring often until the sauce thickens a bit.

  7. Return pork to the pan and cook for 2 minutes will stirring.

  8. Garnish with sesame seeds and chopped green onions. Serve immediately with vegetable fried rice. (white or brown will also do!)
