Ramen
Warm and cozy ramen in a rich flavorful broth made much healthier thanks to Mike's Mighty Good organic steamed ramen noodles.
INGREDIENTS
*Two servings
2 pkg Mike's Mighty Good Ramen (I used vegetable kimchi and pork)
1 handful of trimmed green beans
1 lime
1 white meat chicken breast
2 green onions
1 handful of cilantro
1 jalapeno
1/2 cup mushrooms
1 tsp of siracha or more to taste
INSTRUCTIONS
1. Boil water according to ramen package.
2. Add the trimmed green beans to a steamer basket and steam over boiling water for about 5 minutes. Transfer to a bowl once cooked. Meanwhile, cook the chicken breast either on the grill or in the oven. Let cool then slice or shred into pieces. Meanwhile, slice the green onions, jalapeno, mushrooms, and lime.
3. Add ramen noodles to the boiling water and cook according to package, about 3-4 minutes. Remove from heat, empty the contents of the seasoning packet/ oil and stir until incorporated.
4. Garnish with your favorite toppings and siracha to taste.
